At the age of 19, Josh found himself working over 70 hours a week for a local company, and it wasn’t long before he began to stir up ideas of owning a business himself. Having been raised in Northern Indiana, Josh recalled his grandfather’s friendship with Nelson Gongwer, inventor of the Port-A-Pit cooking system. With help from his father, Doug Lindvall, he began to see the potential for a Nelson’s Catering location in the Central Illinois Area. Leading our company as President, Josh keeps busy overseeing the day-to-day business here in the office. He makes it a point to connect with clients, ensuring their needs are met and expectations exceeded! Besides investing his time here at the office, Josh can be found enjoying his love of sports, traveling or just spending time with his family—his wife, Jamie, and their daughters, Addison & Kennedy.

Starting out here at the age of 14, Jeff was eager to help build Nelson’s Catering into what it is today. Joining forces with his brother, Josh, Jeff brought to the table his extensive knowledge of vendor resources, drive to only provide the best of everything for our clients and willingness to think outside of the box. Spend five minutes with Jeff, and you’ll soon see that his determination to ensure top quality, from our staff members to our foods, makes Nelson’s a fierce competitor for the catering circuit. There isn’t much you can throw at our Vice President that he can’t figure out. If there’s ever a question of how, when or who, Jeff is the man who holds the answers. When he isn’t spending his time perfecting every last detail of your event, you’ll find him with his wife, Rebekah, and their daughters, Juliet & Aurora, traveling and getting in as much family time as possible!

Starting here at the beginning of 2001, Sheila has played an essential part in helping to build up the Nelson’s name. With 25 years (and counting) in the industry, she has filled many positions, finally realizing one day where her true passion was catering. Sharing her bright personality with our office on a daily basis, Sheila is also quick to share her extensive knowledge of the ins and outs of everything here at Nelson’s. As the years have flown by, Sheila’s main focus has always been providing top quality event planning expertise for your corporate events, wedding day fun and everything in between! In the office and out, Sheila has a personal interest in providing as much assistance and attention to St. Jude’s, the Easter Seals, and the Wounded Warrior Project. Adding to her busy schedule, you can find Shelia spending free moments cruising around on a Harley or enjoying as much time as she can with her kids, Ian & Holly, as well as her granddaughter, Ava!

Joining our team in 2011, Troy was more than qualified for the job. He had previously owned and managed Tuscany for over 8 years before shifting gears into the catering business. Holding the title of our Production Manager & Head Chef, you can almost always find Troy in our kitchen showing off his culinary skills! Between building new recipes, implementing fresh ideas or tweaking things until they meet Nelson’s highest of standards, Troy is constantly perfecting each of our signature foods for your specific event! When Troy isn’t highly focused on your catering menus, he’s spending his free time tending to his 1500-acre farm, enjoying the outdoors and relaxing with his wife, Mandy, and their son, Carter.

Quentin first joined Nelson’s in 2011, bringing with him his years of prep-work experience, as well as maintaining the culinary aftermath of events! It’s rare to not see Quentin’s smiling face or “get it done” attitude around here, even well before sunrise. Quentin takes pride in ensuring your equipment looks spotless and that it is never less spotless for your events. Tackling the aftermath of events ranging from 25 to several thousand people is a job not made for the unmotivated individual, but Q, as we affectionately call him, pulls it off with ease! When Q isn’t dedicating his time to ensuring that the cleanliness of your event equipment is of the highest of standards, you can find him entertaining his hobby of music, attending sporting events or planning family trips with his wife, Cathy, and their four children.

When John first joined our team in late July of 2013, he was drawn in by what he’d heard about Nelson’s Catering and the awesome work environment we offer here. Now that he’s here, his primary job focus is as our “kitchen Coordinator.” John is our main guy for ensuring that just the right items get sent to your event, and his inviting personality makes him a great fit for catering or delivering alike, when he’s not busy with his lists. John’s attentive focus to his work, as well as that great personality of his, made us realize from the start what a great asset he is to our team! When John isn’t hard at work at Nelson’s, you can most certainly find him with his daughter, Hailey, getting into whatever fun they can get their hands on!

Justin joined Nelson’s team in December of 2013, soon after realizing he needed a change in scenery. From his previous position as a concrete foreman, Justin’s main job is now as one of our talented cooks. From the very start, he has always been ready and willing to tackle any task we put in front of him. He’s quick to help anyone who needs assistance and enjoys exploring different job responsibilities. It’s pretty rare to not find Justin rocking out to his music in the kitchen, making sure our signature items are prepared exactly the way they need to be for your event. Now that Justin’s been with us for a while, we couldn’t imagine our business without his go-with-the-flow attitude or sense of humor to keep us entertained.

Jordan joined our team in 2013 bringing with him a wide breadth of knowledge. Having management experience in restaurants and state government, Jordan is eager to assist you with all of your catering needs! Jordan works directly with businesses, (big and small) schools, churches and many non and for profit organizations helping them facilitate and execute flawless catering events. Whether it’s a huge fundraiser or a small office lunch, Jordan takes his time to ensure that your event’s food is exactly what you want. Jordan moved to Springfield with his fiancée Megan 3 years ago. Originally from the Morton area, Jordan is lucky enough to be marrying his High School sweetheart next year. Jordan spends most of the time playing with his dog Loki, or travelling to football and baseball games.

Starting out with our team in 2007 as one of our Lead Caterers, Mindy quickly became very well known around our events just from her “go, go, go!” work pace. Using her extensive knowledge of what it takes to make your event flow without disruption, Mindy has been spending her years with us continuing to take your event to the next level, as well as training new experts of our catering team, making time to follow-up with each of our clients after their events, and giving you a courtesy call when it’s time to plan your recurring employee meal or fundraiser for the following year! Keeping up with and training our growing team certainly makes hours fly by, but when she’s not connecting with our staff, or you, you’ll find her shuffling her kids from sporting events, PTO events and just getting in as much family time as she can with her children and husband.

Rachel Schwehr comes to Nelson’s having worked in a busy medical office in Springfield for over six years. She is more than likely the friendly voice that answers the phone when you call to place an order. Rachel enjoys the variety of work at Nelson’s from assisting clients with booking events to managing the daily office duties. Rachel enjoys spending time with her husband, Todd and their active son, Lucas.

As a former teacher, Theresa is quite accustomed to the busy atmosphere here at Nelson’s. Joining the team in 2015, Theresa jumped right in. With past experience not only teaching but in hotel sales, Theresa understands the importance of listening to the customer’s needs and working hard at providing the best possible catering experience. When Theresa isn’t answering client questions, preparing proposals or assisting around the office, you can find her with her husband, Nick, and their son, Robert going to sporting events, working in their yard and socializing with friends.
